It was 9 in the morning and I could not help but to notice through the window of a small Japanese restaurant a man working hard behind the counter with his wife near his side cooking. I walked in and struck up a conversation. I asked the small framed man, "How many Sushi rolls do you may each day... is that what you call them, Sushi rolls?" He continued to watch the TV in front of him that was clearly in Japanese as he rapidly cut through avocado's, "140 rolls or more." I asked, "Do you like making them?" He said, "Yes."
